I made my grandmother's zucchini cupcakes muffins. Growing up, we always called them zucchini cupcakes and I'm pretty sure I was at least 26 before I realized, "Wait a minute... these are MUFFINS! And I hate muffins! And they're not cupcakes at all! They're like bread... with a vegetable in them??"
But they were still the super delicious muffins I had eaten my whole life so this realization did nothing other than to make me realize they didn't have to be for special occasions (like how I think of cupcakes).
The recipe is one of those classic "dump and mix" recipes, which makes me wonder why I never helped with it when I was little. You simply put all of the ingredients in a bowl: eggs, flour, grated zucchini, sugar, cinnamon, oil (I used applesauce), nuts (I used pecan; my grandmother usually used walnuts), baking soda, baking powder, and vanilla. And then you mix it up with a spoon and drop into greased muffin tins. Boom, done, yum. I made both regular muffin size and mini muffins. (I'd have a picture, but I just cannot photograph bread products well. They look just... blah.)
I gave one of the mini muffins to Nate but he wasn't very interested in it. I have hope, though. My sister's kids eat them up. I know he will, too.
Day 9
I ate my lunch outside at work while reading my current library book. The temperature was an incredible 82 degrees. The day was simply gorgeous.
